Caprese Sandwich

I love food that is fresh, simple, and delicious like these Caprese sandwiches. Food is best when it is in season and there isn’t a better time to eat tomatoes than in the summer. All you need is some good bread, juicy tomatoes, fresh fragrant basil, soft mozarella cheese, good quality olive oil and some balsamic glaze. This sandwich is essentially Caprese salad in sandwich form. Great for picnics, lunch, dinner or snacks, anytime, anywhere. The kind of sandwich you’ll want to make again and again.

Ingredients needed to make Caprese Sandwich:
- 2 slices bread, I like thin toasty bread or a crusty Italian or sour dough
- 1 tbsp extra virgin olive oil
- 1 garlic clove, cut in half for rubbing toast
- 2 thick slices tomatoes, one cut in half if needed to fit bread
- Salt and pepper, to taste
- 2 thick slices soft mozarella, one cut in half if needed to fit bread
- 3-4 large fresh basil leaves
- 1 1/2 tsp balsamic glaze
- 1 leaf lettuce or a handful of baby arugula

How to make a Caprese Sandwich:
- First toast the bread and then drizzle both sides evenly with olive oil. Rub a piece of garlic clove all over each side over the olive oil.

- Add tomatoes, salt and pepper to taste, mozarella cheese and basil to one side of the sandwich.

- Drizzle balsamic glaze over the top of the tomatoes, cheese and basil side of the sandwich.

- Top with leaf of lettuce or a handful of baby arugula and place top on the sandwich of toast with olive oil side facing inwards.

- Cut sandwich in half and enjoy!


Notes:
- Crusty Italian bread, sour dough, focaccia, or my favorite, thin sliced whole grain is fine. You can’t go wrong with any bread because the sandwich filling is the star of the sandwich.
- I like to salt and pepper on the tomato layer but you can salt and pepper the sandwich at the end as well. The salt and pepper seem to be absorbed in to the tomato which is yummy!
- You can skip rubbing the garlic on the bread if you want but the garlic flavor is delicious. You could also sprinkle with a little garlic powder if you prefer.
