Banana Oatmeal Cookies
These banana oatmeal cookies are one of my very favorites. They have that yummy banana flavor with a crazy delicious browned butter glaze. There is nothing like that combination and they are very addictive. You really will not be able to resist eating more than one. I hate heating up the kitchen in the summer by baking, but I had a craving for these cookies so I fired up the oven. These cookies are so decadent with the browned butter glaze. There is nothing quite like browned butter anything! You have got to try them!!
How to make Banana Oatmeal Cookies with browned butter glaze:
I played around with the ingredients to find the perfect combination for a moist, chewy cookie. They had to have just the right texture and I think that I succeeded. You will need the following ingredients for the cookies:
- Shortening (I tried making the cookies with butter and shortening and the texture was much better with the shortening.)
- Brown and granulated sugars
- Egg
- Two medium bananas, mashed
- All purpose flour
- Salt
- Baking soda
- nutmeg
- cinnamon
- quick oats
- vanilla
Here’s how to make the cookies:
- Cream the shortening with the sugars.
- Add the mashed banana, egg, and vanilla and blend well.
- Add all of the dry ingredients to the wet ingredients and mix to combine.
- Using a cookie scoop or a tablespoon, drop the cookie dough on a greased cookie sheet or line it with parchment paper. Mash the center of the cookies down a little to give them a round appearance. I like to use a silicone baking sheet which doesn’t need any greasing or cooking spray. The scoop that I use looks like this one:
- Place the cookie dough on the baking sheet and in the mixing bowl in the refrigerator while the oven heats up. (Helps the cookies not to spread out as much.)
- Preheat the oven to 375 degrees.
- Bake the cookies for 12 minutes or until they start to become golden brown.
- Let the cookies cool slightly and then transfer to a baking rack with a towel underneath to catch the drippings.
- Glaze the warm cookies with browned butter glaze recipe below.
Making Browned Butter Glaze for Banana Oatmeal Cookies:
While the cookies are baking make the browned butter glaze with butter, milk, powdered sugar and vanilla.
- First put the butter in a medium saucepan on medium heat and let it brown until you get some brown bits on the bottom of the pan like the picture below:
Watch the butter closely and take care not to burn it. After it is browned pour the butter into a medium sized bowl. Don’t pour out the residue in the bottom of the pan. It will look like this:
- Add the powdered sugar to the butter and then mix in the milk and vanilla. Start with 3 tablespoons of milk and then add another until it is thin enough to glaze the cookies with.
- Leave the cookies on the baking sheet until slightly cool and transfer them to a baking rack with a towel underneath to catch the drips. Glaze the cookies and let them finish cooling.

- 1/2 cup granulated sugar

- Makes 2 1/2 dozen cookies.
