Apple German Pancake

Sometimes called a Duch baby, this Apple German Pancake is an impressive and incredibly easy to make dessert or breakfast.  It is my favorite dish to order at the pancake house so I recreated  it at home.  It is beautiful to look at and tastes so good with sweet apples and cinnamon.  It’s a treat that your family and friends will love!

Why You’ll Love Apple German Pancake:

  • Minimal ingredients, Maximum Flavor:  Use ingredients you already have in your pantry such as eggs, flour, milk, butter, and apples.
  • Family-friendly:  Kids and adults alike will love its sweet, soft center and sweet apples.  It’s fun to watch it puff up in the oven too!
  • One-Pan:  Minimal cleanup!  Everything bakes in a single ovenproof skillet.

 

Ingredients needed to make Apple German Pancake:

  • 3 tbsp butter
  • 2 medium Granny Smith apples, peeled and sliced (I use an apple corer slicer to make this easier)
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 3 large eggs
  • 1/3 cup milk
  • 1/3 cup heavy cream
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 1/2 cup flour

 

How to Make Apple German Pancake:

  • Preheat oven to 425 degrees.  Peel, core and slice two Granny Smith apples.
  • In 12″ cast iron skillet or oven-proof skillet, melt 3 tbsp butter on stovetop.  Place apple slices in the pan and sprinkle brown sugar, cinnamon and nutmeg over the apples.  Stir to combine and cook until apples are soft and starting to carmelize on the edges.  Spread apples out evenly on bottom of pan.  Remove from the heat and prepare the batter.

  • Whisk together or mix in blender the eggs, milk, heavy cream, sugar, flour, salt and vanilla.  There may be a few lumps in the batter.  Pour batter over the apple mixture.

  • Place skillet in oven and bake for 12-15 minutes or until light golden brown.

  • Serve dusted with powdered sugar and/or maple syrup.

Notes:

  • Slice apples thinly so they cook quickly and evenly.
  • Serve immediately; the pancake will deflate as it cools but is still delicious.
  • Try other variations:  swap apples for blueberries or raspberries.  Try using sliced peaches for a summer twist.
