Blueberry Yogurt Parfait

My blueberry yogurt parfait is a cool, creamy treat bursting with blueberries that tastes like summer with every delicious bite. Made with Greek vanilla yogurt, homemade blueberry compote, fresh blueberries, granola and slivered almonds, this parfait is the perfect balance of creamy, fruity and crunchy in every bite. To save time you can make the compote ahead of time and refrigerate it until you are ready to put the parfait together. A refreshing and healthy way to start your day.


Ingredients needed to make Blueberry Yogurt Parfait:
For the blueberry compote:
- 2 cups fresh blueberries
- 2 tbsp water
- 2 tbsp granulated sugar
- 2 tbsp honey
- 1 tsp fresh lemon juice
- 1/2 tsp vanilla extract (optional)
Parfait ingredients:
- Two 8 oz Mason jars or parfait glasses
- 2 5.3 oz containers Greek vanilla yogurt
- 1/2 cup blueberry compote (see recipe below)
- 1/2 cup fresh blueberries
- 1/4 cup blueberry or plain granola (I use an organic blueberry superseed granola for high protein)
- 2 tbsp slivered almonds
- A few fresh blueberries of a fresh raspberry for garnish on top of the parfait
How to make Blueberry Yogurt Parfait:
Blueberry compote:
- Put 2 cups fresh blueberries, 2 tbsp water, sugar and honey in a medium saucepan. Stir together and bring to a boil.



- Reduce the heat to medium low and continue to simmer for about 18 minutes or until mixture begins to thicken.

- Add lemon juice and vanilla extract, if using. Stir and remove from the heat.
- Let mixture cool and then refrigerate any leftovers.
To assemble parfait:
- For each parfait, layer half of a container of yogurt in the bottom of a Mason jar.

- Place desired amount of blueberry compote (about 2 tbsp) on top of the yogurt.
- Top with about 2 tbsp fresh blueberries.

- Repeat with another layer of yogurt, compote, and blueberries.

- Top all with about 2 tablespoons of granola and about 1 tablespoon of slivered almonds.

- Top with fresh blueberries or a raspberry if desired.

Notes:
- If you are going to eat the parfait right away you could also add granola on top of the first layer.
- If you want more granola you can add more as you eat the parfait. You can never have too much granola crunch!
- Parfaits could be made ahead of time and covered in the refrigerator. Add the granola and almonds when ready to eat so they don’t get soft.
- Make the compote ahead of time and refrigerate until ready to assemble the parfaits.
- Any leftover blueberry compote can be used as ice cream topping or pancake or waffle topping.
- Customize your yogurt parfait with other fruits or toppings as desired.
