Cake Mix Sandwich Cookies
Learn how to make easy cake mix sandwich cookies with creme de menthe frosting. Use any cake mix, oil, eggs and vanilla and bake. I used a devils food cake mix but you can change this recipe up and make any flavor that you want. I have included a delicious recipe for creme de menthe frosting but you can frost with any flavor frosting. Cookies can be made individually as well. You would never know these cookies are made with a cake mix!
Ingredients needed to make Cake Mix Sandwich Cookies:
For cake mix cookies:
- 1 13.25 oz Betty Crocker Cake Mix (may use any flavor)
- 1/3 cup avocado or other neutral oil
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 1/2 cup semi-sweet chocolate chips, optional
Creme de Menthe frosting ingredients:
- 4 cups confectioner’s sugar, sifted
- 1/2 cup butter, softened
- 8 oz cream cheese, softened
- 2 tbsp green creme de menthe liqueur
- 1/4 tsp peppermint extract
- 4 drops green food coloring
How to make Cake Mix Sandwich Cookies:
- Preheat oven to 350 degrees. Line a cookie sheet with a silicone baking mat or parchment paper.
- In a large bowl stir together the cake mix, oil, eggs and vanilla, then fold in chocolate chips, optional. Batter will be fairly thick.
- Scoop dough into balls with a cookie scoop or a tablespoon and form into even balls. You can make 10 large cookies with this recipe. Cookie dough can be formed into smaller balls if you want a smaller sandwich cookie. If making smaller cookies you may need to reduce the cooking time slightly.
- Place cookies on prepared cookie sheet and bake for 8-10 minutes. Cool on the cookie sheet for about 4 minutes and remove to a cooling rack. Cool cookies completely before filling with frosting.
- May serve cookies unfrosted individually or make into sandwich cookies.
- Make frosting while cookies are cooling.
Creme de Menthe Frosting:
- Sift confectioner’s sugar into a large mixing bowl and set aside. This makes frosting smooth and creamy with no lumps.
- In a large mixing bowl cream the butter and cream cheese together until smooth using an electric hand mixer.
- Gradually add sifted confectioner’s sugar to the creamed mixture and continue mixing until smooth about 1-2 minutes.
- Mix in the green creme de menthe liqueur and peppermint extract. Add about 4 drops of green food coloring or to your desired shade of green. Stir until flavoring and food coloring are incorporated and mixture is smooth and fluffy.
- To frost the cookies place one cookie with top side down on a plate. Place large scoop of frosting on the middle of the cookie and top with the flat side of another cookie. The rounded side of the cookies should be facing out and the flat sides frosted. Slightly push the cookies together.
- Store the cookies in a covered container in the refrigerator to set the frosting. Cookies can be kept in the refrigerator for up to 5 days.
Notes:
- May use any flavor of cake mix that you desire and any frosting flavor for the sandwich cookie.
- Cookies are best if you let the frosting set up in the refrigerator for 30 minutes before eating.
- Cookies can be rolled in sprinkles, crushed peppermint, etc (roll the frosted portion of the cookie so it sticks to the frosting). You could place M&M’s or other candies around the frosted portion of the cookie as well.
- Store in the refrigerator in a covered container for up to 5 days if they last that long.
