Easy Asparagus Bacon Quiche
Easy asparagus bacon quiche makes a delicious breakfast, brunch or light dinner. It is full of flavor and tastes as good as it looks! This quiche is made with fresh asparagus spears, salty bacon, sharp white cheddar cheese, shallots and a delicious egg custard. Who doesn’t love anything with bacon and cheese? I make mine with a unbaked refrigerated pie crust to save time but you could also use a homemade pie crust. I used Costco bacon that is already cooked so you just throw it in the microwave and it is always delicious! This comes together in less than an hour and will be the star of your meal. Your friends and family will love it!
Ingredient list f0r Easy Asparagus Bacon Quiche:
- 8 slices of bacon, cooked and chopped
- Canola oil spray or 2 tbsp bacon grease
- 1 1/4 cups asparagus, chopped into 1″ pieces, plus several whole spears with ends cut off for the top of the quiche. I like to use asparagus that is on the thinner side for the quiche.
- 1 medium shallot, cut in half and diced
- 1 unbaked refrigerated pie crust shell (you can also use homemade pie crust)
- 1 cup sharp white cheddar cheese, grated
- 5 large eggs
- 3/4 cups whole or 2% milk
- 1/2 cup full cream
- 1/4 tsp truffle parmesan and black garlic salt or regular garlic salt (I use Curious Spoon brand from Walmart)
- 1/4 tsp white or black pepper
How to make Easy Asparagus Bacon Quiche:
- Preheat oven to 400 degrees.
- Cook the bacon and then chop it into bite sized pieces. I use Costco bacon and cook it on a paper towel in the microwave until it is crispy about 1 to 2 minutes. You can also cook the bacon in a large frying pan and save 2 tablespoons of grease to saute your vegetables in.
- When bacon is done spray large frying pan with canola cooking spray (or use 2 tablespoons of bacon grease) and saute the shallots and chopped asparagus over medium to medium high heat until the vegetables are tender and shallots are transluscent. Stir frequently to prevent vegetables from burning. Set vegetables aside.
- Place the unbaked or homemade pie shell in a 9″ pie plate. This recipe does not require pie crust to be blind baked.
- Place chopped bacon on top of pie crust and then add vegetables.
- Sprinkle grated white cheddar cheese over the top of the vegetables.
- In a medium bowl whisk the milk, cream, truffle parmesan black garlic salt or plain garlic salt and white pepper together.
- Here is a picture of the garlic salt that I use. If you can find it it’s really delicious. I use it on everything!
- Pour the egg mixture over the bacon, veggies and cheese.
- Place trimmed raw asparagus spears on top of the unbaked quiche.
- Bake quiche in oven at 400 degrees for 15 minutes. Lower the heat to 350 degrees and continue baking for another 25-30 minutes or until top of quiche is turning a golden brown. You can also check the center of the quiche with a toothpick.
- Remove quiche from the oven and let it cool to set about 5-10 minutes. Cut into wedges and serve.
- Cover any leftover quiche and store in the refrigerator for up to 3 days.
- Makes 6-8 servings depending on desired size.
