Quick Pizza Quesadilla
Quick pizza quesadilla is a fast and easy way to make pizza in a frying pan with flour tortillas. Quesadillas are so good and ready in 15 minutes. This recipe includes a quick and easy pizza sauce and is so versatile. Use any of your favorite pizza toppings along with plenty of gooey mozarella cheese. Just spray a non-stick frying pan with cooking spray and place the quesadilla pizza in to brown the tortilla and melt the cheese. This will be a favorite of your entire family!
What do I need to make Quick Pizza Quesadilla?
For the pizza sauce:
- 1 8 oz can tomato sauce
- 1 tbsp tomato paste (I use the kind in a tube)
- 1/4 tsp Italian seasoning
- 1/4 tsp onion salt or garlic salt blend (I like Trader Joe’s onion salt or aglio olio seasoning. I don’t get any commission for recommending them.)
- a few pinches of black pepper
For the pizza quesadilla:
- 8 taco size flour tortillas
- 4 tbsp pizza sauce (see recipe)
- 2 cups mozarella cheese (or more if you like a lot of cheese)
- 1 6 oz package of pepperoni (you will need at least 36 pepperoni slices)
- 1/2 cup sliced black olives (or desired amount for your pizza)
- You can substitute your favorite pizza toppings as desired such as salami, Canadian bacon, mushrooms, green peppers, pineapple, etc.
How to make Quick Pizza Quesadilla:
- In a medium size bowl mix the tomato sauce, tomato paste, Italian seasoning, garlic salt blend and pepper together and set aside. Any leftover pizza sauce can be stored in the refrigerator for about 5 days or frozen in a freezer safe container.
- Place one flour tortilla on a large plate or cutting board to assemble. Place one large tablespoon of pizza sauce on the tortilla and spread it around the middle leaving about an inch on the sides.
- Sprinkle a handful of cheese over the pizza sauce evenly.
- Place pepperoni slices on top of the cheese and then sprinkle black olive slices on top.
- Sprinkle a little more cheese over the toppings so the quesadilla will stick together.
- Top with another tortilla.
- Spray non-stick frying pan generously with cooking spray and heat to medium high.
- Place quesadilla pizza in the heated frying pan and watch carefully. If needed turn heat down a little. When the bottom tortilla is golden brown carefully turn the pizza to the other side with a spatula holding the top tortilla with your hand.
- Cook the other side until it is golden brown and the cheese inside is melted.
- Remove the quesadilla pizza from the pan and cut into fourths with a pizza cutter.
- Enjoy! One serving is a whole quesadilla pizza.
- You can store any leftovers in tinfoil in the refrigerator for up to 3 days.
Serving suggestions and storage:
- Try dipping the pizza quesadilla in pizza sauce or ranch dressing.
- Quesadillas can be stored in the refrigerator in an airtight container for up to 5 days.
- They can be frozen on a cookie sheet individually and then store in airtight freezer container for up to 4 months.
