Ingredients needed to make Sausage Green Pepper Pappardelle:

  • 1 tbsp olive oil
  • 1/2 large onion, chopped
  • 1/2 large green pepper, chopped
  • 1/2 lb Italian sausage
  • 3 garlic cloves, minced
  • 1 14.5 oz can crushed tomatoes, undrained
  • 2 cups beef broth
  • 1/2 tsp dried oregano
  • Salt and pepper, to taste
  • 8 oz papardelle pasta
  • 3 oz fresh baby spinach
  • 1/4 cup Parmesan cheese, grated
  • Fresh chopped parsley or basil, optional for garnish

 

How to make Sausage Green Pepper Pappardelle:

  • Heat olive oil in a Dutch oven over medium-high heat.  Add sausage, breaking it into small pieces with a wooden spoon.  Add onion and green pepper and cook until sausage is browned and onion and green pepper are softened.  Add garlic and cook for 1 minute.

  • Pour in the crushed tomatoes, beef broth, oregano and salt and pepper, to taste and bring to a boil.

  • Add pappardelle pasta and stir to submerge in the liquid.  Cover, reduce heat to medium-low and simmer about 7 minutes or until pasta is nearly al dente.
