Rolo Cake Mix Cookies

Rolo cake mix cookies are perfectly easy and so decadent! All you need is a devils food cake mix, eggs, oil, rolo candies and powdered sugar. I love recipes like this that you can bake up quickly and that taste like a million bucks! This cookie is chocolate heaven with a chewy chocolate outside and gooey carmel on the inside. Bite into a warm cookie and you get an ooey, gooey carmel surprise. It doesn’t get any better than this!


Ingredients needed to make Rolo Cake Mix Cookies:
- 1 box Devils Food cake mix
- 2 large eggs
- 1/3 cup canola oil or other neutral oil
- 1 bag Rolo candies
- 1/4 cup powdered sugar (to roll cookie dough balls in)
How to make Rolo Cake Mix Cookies:

- In a large mixing bowl combine the cake mix, oil and eggs. Stir together with a wooden spoon as batter will be very thick.
- Place the dough in the refrigerator and chill for 1-2 hours or overnight. Place bag of Rolo candy in the freezer. The batter is quite sticky and chilling it makes it easier to work with.
- When ready to bake, heat the oven to 350 degrees. Prepare a baking sheet with parchment paper, silicone mat or spray cookie sheet with cooking spray.
- Spray your hands with a little cooking spray so the dough doesn’t stick to your fingers. Scoop out dough with a large spoon and spread the dough out with your hands so you can wrap the Rolo candy inside. Wrap the dough around the candy to cover it completely.
- Place powdered sugar in a small bowl and roll the cookie dough ball in the powdered sugar.

- Bake cookies for 10-12 minutes or until they are set. Watch them so they don’t overcook. They will start to crack on the top when they are done.
- Remove the cookies from the oven and let them cool on the cookie sheet for 1-2 minutes. Transfer the cookies to a cooling rack.
- This recipe makes approximately 2 dozen cookies.


Storage of cookies:
- Let cookies cool completely and store in ziplock bag or airtight container.
- These cookies freeze very well and can be kept in the freezer for up to 3 months.
