Rolo Cake Mix Cookies

Rolo cake mix cookies are perfectly easy and so decadent! All you need is a cake mix, eggs, oil, rolo candies and powdered sugar.

- 1 box Devils food cake mix
- 2 large eggs
- 1/3 cup canola oil (or other neutral oil)
- 1 bag Rolo candy
- 1/4 cup powdered sugar (to roll cookie dough balls in)
In a large mixing bowl combine the cake mix, oil and eggs. Stir together with a wooden spoon as batter will be very thick.
Place the dough in the refrigerator and chill for 1-2 hours or overnight. Place bag of Rolo candy in the freezer. The batter is quite sticky and chilling it makes it easier to work with.
When ready to bake, heat the oven to 350 degrees. Prepare a baking sheet with parchment paper, silicone mat or spray cookie sheet with cooking spray.
Spray your hands with a little cooking spray so the dough doesn't stick to your fingers. Scoop out dough with a large spoon and spread the dough out with your hands so you can wrap the Rolo candy inside. Wrap the dough around the candy to cover it completely.
Place powdered sugar in a small bowl and roll the cookie dough ball in the powdered sugar.
Bake cookies for 10-12 minutes or until they are set. Watch them so they don't overcook. They will start to crack on the top when they are done.
Remove the cookies from the oven and let them cool on the cookie sheet for 1-2 minutes. Transfer the cookies to a cooling rack.
This recipe makes approximately 2 dozen cookies.
