Shaved Brussels Sprouts Salad
Shaved brussels sprouts salad is a great winter salad for holidays or any day. It is fresh, healthy and easy to make with shaved brussels sprouts, dried cranberries, sliced, roasted almonds, shredded white cheddar cheese and a tart vinagrette dressing. It is a simple, but delicious, salad that you will love and feel good about eating!
Ingredents for Brussels Sprouts Salad:
- 4 cups of shaved or thin sliced brussels sprouts. You can buy shaved brussels sprouts at the store but they aren’t as fresh as slicing them yourself.
- 1/3 cup olive oil
- 1/4 cup apple cider vinegar (I used raw pumpkin vinegar from Trader Joes which tastes like apple cider vinegar)
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 1 tsp fine sea salt
- 1/2 tsp ground pepper
- 1 cup dried sweetened cranberries
- 1 cup grated white cheddar cheese (can substitute fresh grated Pecarino or parmesan cheese)
- 1/2 cup toasted, sliced almonds (can substitute chopped pecans, pepitos, or pinenuts)
- 1/4 cup fresh chopped parsley
- Other optional add-ins: thin apple slices, thin sliced red onion or shallots, chopped green onions, or pomegranate arils
How to make Shaved Brussels Sprouts Salad:
- Rinse and dry your brussels sprouts. Trim the stems from the end of each brussels sprouts. Save the green leaves that fall off as well.
- Slice the brussels sprouts as thin as possible either with a mandoline or on a cutting board with a sharp knife. Place the brussels sprouts in a large salad bowl.
- In a glass measuring cup or a Mason jar combine the olive oil, apple cider vinegar, Dijon mustard, honey, fine sea salt and pepper. Whisk together well. If using a Mason jar, you can cover with a lid and shake the dressing well.
- Pour the vinagrette dressing over the brussels sprouts and stir everything well to combine. Let the mixture sit for about 15 minutes so the dressing soaks in.
- Add the cranberries, almonds, shredded cheese, and the fresh chopped parsley to the brussels sprouts. Toss the salad together. It can be served immediately or you can cover it and refrigerate for several hours.
- This salad keeps covered in the refrigerator for a couple of days if it lasts that long!
