Shaved Brussels Sprouts Salad

Shaved brussels sprouts salad is a great winter salad for holidays or any day. It is fresh, healthy and easy to make.

Ingredients
  

  • 4 cups shaved or thinly sliced Brussels sprouts
  • 1/3 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tsp fine sea salt
  • 1/2 tsp ground black pepper
  • 1 cup dried, sweetened cranberries
  • 1 cup grated, white cheddar cheese (may substitute fresh grated parmesan or pecorino cheese)
  • 1/2 cup toasted, sliced almonds (may substitute chopped pecans, pepitos, or pinenuts)
  • 1/4 cup fresh chopped parsley leaves
  • Additional optional ingredient suggestions: thinly sliced apple, thinly sliced fennel, thinly sliced red onion or shallot or chopped green onions, or pomegranate arils

Instructions
 

  • Rinse and dry your brussels sprouts.  Trim the stems from the end of each brussels sprout.  Save the green leaves that fall off as well.
  • Slice the brussels sprouts as thin as possible either with a mandoline or on a cutting board with a sharp knife. Place the brussels sprouts in a large salad bowl.
  • In a glass measuring cup or a Mason jar combine the olive oil, apple cider vinegar, Dijon mustard, honey, fine sea salt and pepper.  Whisk together well.  If using a Mason jar, you can cover with a lid and shake the dressing well.
  • Pour the vinagrette dressing over the brussels sprouts and stir everything well to combine.  Let the mixture sit for about 15 minutes so the dressing soaks in.
  • Add the cranberries, almonds, shredded cheese, and the fresh chopped parsley to the brussels sprouts.  Toss the salad together.  It can be served immediately or you can cover it and refrigerate for several hours.
