Air Fryer Zucchini Fries

Air fryer zucchini fries are the perfect appetizer or side dish and these are extra crispy with a perfectly tender center.  An easy to make and healthy alternative to deep fried zucchini they are also yummy!  Kids and adults will love them.  They are delicious served with marinara sauce, ranch dressing, siracha mayonnaise or your favorite dipping sauce.  Serve them hot from the air fryer and watch them disappear!

Ingredients for Air Fryer Zucchini Fries:

  • 2 medium zucchini, cut into approximately 3 1/2 x 1 inch spears (you can also cut them into sticks if you prefer)
  • 1 cup panko style bread crumbs
  • 1/4 cup Italian breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tsp dried parsley
  • 2 tsp garlic seasoning or 1 tsp garlic powder (I like to use 1 tsp Curious Spoon Truffle Parmesan and Black Garlic seasoning and 1 tsp Trader Joe’s Aglio Olio garlicky seasoning blend).
  • 1 tsp dried basil
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika (optional)
  • 1/2 tsp fine sea salt
  • 1/4 tsp ground black pepper
  • 1/2 cup all purpose flour
  • 2 large eggs

 

How to make Air Fryer Zucchini Fries:

  • Wash and dry the zucchini and cut them into 3 1/2″ x 1″ spears (you may cut into sticks if preferred).   The most important thing is that you cut them all the same size so they will bake evenly.
  • Mix the breadcrumb, parmesan, spice mixture together in a medium bowl or pie tin.
  • Place eggs in a medium bowl or pie tin and beat them together well.
  • Place flour in a medium bowl or pie tin.
  • Pat zucchini spears dry with a paper towel before dredging them to remove excess water.
  • Dip the zucchini spears into the flour mixture to coat them.  Proceed to dip into the egg mixture and then into the bread crumb mixture.  Make sure they are well coated with breadcrumbs.

  • Spray the air fryer basket with non-stick olive oil spray.
  • Place the zucchini fries in the fryer basket so they are not touching each other.  This will ensure that they become crispy.  You will need to cook them in batches.
  • Spray the zucchini fries with the olive oil non-stick spray and bake at 375 degrees for about 7 minutes or until they are deep golden brown in color.  Watch so they don’t burn.
  • Remove from the air fryer and serve warm with heated marinara sauce, ranch dressing, siracha mayo, or your favorite dipping sauce.  To make siracha mayo mix 2 tbsp siracha (or to your taste) with 1/2 cup mayonnaise.

  • NOTE:  If you have any leftovers you can wrap in tinfoil and reheat in the oven or remove from the foil and reheat in the air fryer.  Make only the amount you can eat in a day or two.  I wouldn’t recommend freezing the zucchini fries.
