Wash and dry the zucchini and cut them into 3 1/2" x 1" spears (you may cut into sticks if preferred). The most important thing is that you cut them all the same size so they will bake evenly.
Mix the breadcrumb, parmesan, spice mixture together in a medium bowl or pie tin.
Place eggs in a medium bowl or pie tin and beat them together well.
Place flour in a medium bowl or pie tin.
Pat zucchini spears dry with a paper towel before dredging them to remove excess water.
Dip the zucchini spears into the flour mixture to coat them. Proceed to dip into the egg mixture and then into the bread crumb mixture. Make sure they are well coated with breadcrumbs.
Spray the air fryer basket with non-stick olive oil spray.
Place the zucchini fries in the fryer basket so they are not touching each other. This will ensure that they become crispy. Spray them with the olive oil non-stick spray and bake at 375 degrees for about 7 minutes or until they are deep golden brown in color. Watch so they don't burn. You will need to cook them in batches.
Remove from the air fryer and serve warm with heated marinara sauce, ranch dressing, siracha mayo, or your favorite dipping sauce. To make siracha mayo mix 2 tbsp siracha (or to your taste) with 1/2 cup mayonnaise.
Makes approximately 20 zucchini fry spears. Serving size is 4 spears.
