Apples with filling

Ingredients needed to make Baked Apples:

  • 2 tbsp unsalted butter, softened
  • 2 tbsp brown sugar
  • 1/4 cup walnuts, chopped
  • 1/4 cup rolled oats
  • 2 tbsp maple syrup
  • 1 tsp pumpkin pie spice
  • pinch of salt
  • 3-4 large apples (sweet apples are best such as Gala, Honeycrisp, Golden Delicious, or Rome Beauty).   I used 3 apples so I could pack more filling inside.
  • Vanilla ice cream or whipped cream, optional

How to make Baked Apples:

  • Preheat oven to 350 degrees.
  • Core each apple, using an apple corer, paring knife or melon baller, taking care to leave the bottom intact.  Leave about 1-1/2 inches in the bottom of the apple.

Cored apples

  • In a medium bowl, combine the butter, brown sugar, walnuts, oats, maple syrup, pumpkin pie spice and salt.

Mix filling ingredients together

  • Place the cored apples in a baking dish lined with parchment paper.  Spoon the filling into each apple, packing it in gently.

Pack filling into the cored apples

  • Bake for 40-45 minutes or until the apples are tender to your liking and the filling is golden brown.
  • Remove from the oven and cool about 5 minutes before serving.

Baked apples in pan

  • Serve with a scoop of vanilla ice cream, whipped cream, and/or a drizzle of honey or caramel over the top.

Serve with ice cream

Notes:

  • Add some raisens or cranberries to your filling.  May substitute pecans for the walnuts.  A little orange zest would also be a great addition.
  • You can add a little water to the bottom of the pan to help apples steam if desired.
