- 2 tbsp unsalted butter, softened
- 2 tbsp brown sugar
- 1/4 cup walnuts, chopped
- 1/4 cup rolled oats
- 2 tbsp maple syrup
- 1 tsp pumpkin pie spice
- pinch salt
- 3-4 large apples (sweet apples are best such as Gala, Honeycrisp, Golden Delicious, or Rome Beauty). I used 3 apples so I could pack more filling inside.
- Vanilla ice cream or whipped cream, optional
Preheat oven to 350 degrees.
Core each apple, using an apple corer, paring knife or melon baller, taking care to leave the bottom intact. Leave about 1-1/2 inches in the bottom of the apple.
In a medium bowl, combine the butter, brown sugar, walnuts, oats, maple syrup, pumpkin pie spice and salt.
Place the cored apples in a baking dish lined with parchment paper. Spoon the filling into each apple, packing it in gently.
Bake for 40-45 minutes or until the apples are tender to your liking and the filling is golden brown.
Remove from the oven and cool about 5 minutes before serving.
Serve with a scoop of vanilla ice cream, whipped cream, and/or a drizzle of honey or caramel over the top.
