Cherry French Toast Rollups

Stuffed cherry french toast rollups are bursting with cream cheese and cherry goodness and rolled in cinnamon and sugar.  This recipe was created  to imitate the taste of a Costco Cherry Danish roll which is a favorite breakfast treat for Bob and me.  What I came up with is a combination of cherry danish and french toast.  If you love cherries and cream cheese this is a recipe you will want to try.  What a fun recipe to make and eat with the kids!   Eating with your fingers has never been so much fun! These french toast rollups can be filled with many different kinds of fillings and can be sweet or savory.  French toast has now been taken to a whole new level!!

 

Cherry French Toast Rollups

 

What you need to make Cherry French Toast Rollups:

  • White sandwich type bread (make sure bread is soft and fresh so it is pliable)
  • Softened cream cheese
  • Cherry pie filling
  • Eggs
  • Milk or cream
  • Vanilla extract
  • Butter
  • Sugar
  • Cinnamon

 

How to make Cherry French Toast Rollups:

  • First, mix up the egg mixture and the cinnamon sugar mixture in separate bowls.
  • To assemble the french toast rollups:

 

Remove bread crusts Flatten bread with rolling pin Spread cream cheese on bread Spread cherry pie filling on bread Roll filling in bread

 

  • Remove the crusts from around the edge of each slice of bread.
  • Roll the bread slices flat with a rolling pin or you can flatten them out with your hand.
  • Spread cream cheese on one end of the bread with a knife.
  • Spread about 1 tablespoon of cherry pie filling over the cream cheese.
  • Starting at the filling end roll the bread up like a jelly roll.

 

To cook the french toast rollups:

  • Melt butter in a large frying pan.
  • Dip each french toast rollup in the egg mixture coating the entire outside of the roll.
  • Place french toast rollups seam side down in the hot buttered frying pan.
  • Brown the rollups by turning until all the sides are golden brown as pictured above.
  • Remove the rollups from the pan and roll them in the cinnamon sugar mixture to coat all sides.
  • Serve immediately.  They are sweet and delicious as is but you can drizzle them with maple syrup if desired.

These yummy rollups are so versatile and lend themselves to all kinds of different fillings like sausage links, strawberries, Nutella spread, bananas, blueberries or blueberry pie filling, apple pie filling, chopped pecans or walnuts.  Any combination of fillings would work and you are only limited by your imagination.

Ingredients
  

  • 12 slices white sandwich type bread (fresh and soft)
  • 3 ounces softened cream cheese
  • 3/4 cup cherry pie filling
  • 2 eggs
  • 6 tablespoons milk or cream
