Chicken Caesar Salad Wrap

Learn how to make a super easy chicken caesar salad wrap that makes a great summer lunch. Use any kind of cooked chicken, grilled, rotissierie or air-fried. A great way to use up that left-over chicken! Mix with chopped romaine, baby kale, salad croutons, grated parmesan cheese, chopped bacon, and top with your favorite dressing. You can use your favorite bottled or homemade dressing. I used bottled parmesan ranch dressing just to make it even easier. You can add other items to the wrap like avocado slices, cherry tomatoes, etc. Ready to eat in about 10 minutes. The perfect meal for adults and kids alike!
Ingredients needed to make Chicken Caesar Salad Wrap:
- 2 cups chopped romaine lettuce
- 1 cup baby kale
- 2 cooked chicken breasts, chopped or shredded (about 2 cups). May use grilled, air-fried or rotissierie chicken – any leftover chicken will do.
- 3 slices bacon, chopped
- 1/2 cup croutons, store bought or homemade. I like to chop or break them up a little or you can use them whole.
- 1/4 cup grated parmesan cheese
- 3-4 burrito size flour tortillas (10 inch size)
- 1/4 to 1/3 cup of your favorite dressing. You can make your own or use bottled. I suggest Caesar, ranch, or even blue cheese dressing.
- Other optional ingredients: Cherry tomatoes, cut in half, chopped avocado, cucumber, grated carrot, etc.
How to make Chicken Caesar Salad Wraps:
- In a large bowl mix the lettuce, kale, chicken, bacon bits, croutons and parmesan cheese.
- Warm the tortillas up in the microwave by covering with a paper towel and microwaving for about 10 seconds so they are pliable.
- Place the Caesar salad filling on the bottom third of your tortilla, leaving some space around the sides. This will make it easier to fold it up like a burrito. Drizzle desired amount of dressing over the salad mix, and fold the sides over the filling with a small gap in between. Keep holding the sides of the wrap with your fingers to keep it secure and roll the tortilla up with your thumbs one or two times. If you haven’t tried this before it may take a little practice. Hint: Don’t overfill the tortilla. I know it’s tempting to get as much stuff inside as you can but try to resist! I found this out from personal experience. You can use a little dressing to seal if desired.
- Cut the wrap in half on an angle and secure with toothpicks if necessary. It doesn’t matter if they look perfect – they will taste delicious!
NOTES:
- The wrap ingredients can be prepared ahead of time and stored separately in the refrigerator until you are ready to assemble them.
- Wraps are best served fresh but can be stored wrapped tightly in plastic wrap for a few hours. They will become soggy if stored too long.
