2cooked chicken breasts, chopped or shredded (about 2 cups). May use grilled, air-fried or rotissierie chicken - any leftover chicken will do.
3slicesbacon, chopped
1/2 cupcroutons bought or homemade. I like to chop or break them up a little or you can use them whole.
1/4cupgrated parmesan cheese
3-4burrito size flour tortillas (10 inch size)
1/4cup1/4 to 1/3 cup of your favorite dressing. You can make your own or use bottled. I suggest Caesar dressing, ranch dressing or even blue cheese.
Other optional ingredients: Cherry tomatoes, cut in half, chopped avocado, cucumbers, grated carrot, etc.
Instructions
In a large bowl mix the lettuce, kale, chicken, bacon bits, croutons and parmesan cheese.
Warm the tortillas up in the microwave by covering with a paper towel and microwaving for about 10 seconds so they are pliable.
Place the Caesar salad filling in the center of your tortilla, leaving some space around the sides. I would recommend placing most of the filling on the bottom half of the tortilla (leaving a little space free at the bottom) to make it easier to fold everything inside. Drizzle desired amount of dressing over the salad mix, and fold the sides over the filling with a small gap in between. Keep holding the sides of the wrap with your fingers to keep it secure and roll the tortilla up with your thumbs one or two times. If you haven't tried this before it may take a little practice.
Hint: Don't overfill the tortilla. I know it's tempting to get as much stuff inside as you can but try to resist! I found this out from personal experience. You can use a little dressing to seal if desired.
Cut the wrap in half on an angle and secure with toothpicks if necessary. It doesn't matter if they look perfect - they will taste delicious!
