Oven Beef Tacos

Ingredients:
- 1 lb 85/15 ground beef
- 1/2 onion, chopped
- 1/2 packet taco seasoning
- 1/2 cup salsa
- 1 can diced green chile peppers
- 12 small taco size corn tortillas
- 3 cups colby jack or Mexican cheese, grated
- Optional toppings: Sliced avocado, chopped tomatoes, salsa, sour cream, jalapenos, guacamole
How to Make Oven Beef Tacos:
- Preheat oven to 400 degrees.
- In a skillet over medium heat, cook ground beef, chopped onions, and taco seasoning until beef is browned. Drain any excess grease.

- Add salsa and green chiles and simmer 2-3 minutes or until heated through.

- Place tortillas on baking sheet (unlined so they will crisp up). Place about 1/4 cup of meat on 1 side and 1/4 cup grated cheese on the other side.

- Bake 6 at a time in batches for 3 minutes, then fold tortilla shells in half and flatten with a spatula. Bake 5 minutes, turn and bake 5 more minutes or until cheese is melted and shells are golden brown and crispy.


- Top with desired toppings and serve immediately.

Variations:
- Add refried beans under the beef
- Use ground turkey instead of ground beef
- Swap corn tortillas for small flour tortillas
- Use hard shells instead of soft and place upright in a baking dish. Fill with meat and toppings and bake 8-10 minutes. No folding needed.
Storage & Reheating:
- Store leftovers in fridge up to 3 days.
- Reheat in oven at 350 degrees for 8-10 minutes to re-crisp.
- Freeze assembled (unbaked) tacos up to 2 months.
