Oven Beef Tacos

Oven Beef Tacos are a simple, easy dinner that everyone loves. Crispy shells, perfectly seasoned ground beef, and melty cheese!

1 Large skillet
1 Large baking sheet
- 1 lb 85/15 ground beef
- 1/2 onion, chopped
- 1/2 packet taco seasoning
- 1/2 cup salsa
- 1 small can diced green chile peppers
- 12 small taco size corn tortillas
- 3 cups colby jack or Mexican cheese, grated
- Optional toppings: Sliced avocado, chopped tomatoes, salsa, sour cream, jalapenos, guacamole
Preheat oven to 400 degrees.
In a skillet over medium heat, cook ground beef, chopped onions, and taco seasoning until beef is browned. Drain any excess grease.
Add salsa and green chiles and simmer 2-3 minutes or until heated through.
Place tortillas on baking sheet (unlined so they will crisp up). Place about 1/4 cup of meat on 1 side and 1/4 cup grated cheese on the other side.
Bake 6 at a time in batches for 3 minutes, then fold tortilla shells in half and flatten with a spatula. Bake 5 minutes, turn and bake 5 more minutes or until cheese is melted and shells are golden brown and crispy.
Top with desired toppings and serve immediately.
Variations: *Add refried beans under the beef. *Use ground turkey instead of ground beef. *Swap corn tortillas for small flour tortillas. *Use hard shells instead of soft and place upright in a baking dish. Fill with meat and toppings and bake 8-10 minutes. No folding needed.
