Oven Beef Tacos

Oven Beef Tacos are a simple, easy dinner that everyone loves.  Crispy shells, perfectly seasoned ground beef, and melty cheese!

Equipment

  • 1 Large skillet
  • 1 Large baking sheet

Ingredients
  

  • 1 lb 85/15 ground beef
  • 1/2 onion, chopped
  • 1/2 packet taco seasoning
  • 1/2 cup salsa
  • 1 small can diced green chile peppers
  • 12 small taco size corn tortillas
  • 3 cups colby jack or Mexican cheese, grated
  • Optional toppings:  Sliced avocado, chopped tomatoes, salsa, sour cream, jalapenos, guacamole

Instructions
 

  • Preheat oven to 400 degrees.
  • In a skillet over medium heat, cook ground beef, chopped onions, and taco seasoning until beef is browned.  Drain any excess grease.
  • Add salsa and green chiles and simmer 2-3 minutes or until heated through.
  • Place tortillas on baking sheet (unlined so they will crisp up). Place about 1/4 cup of meat on 1 side and 1/4 cup grated cheese on the other side.
  • Bake 6 at a time in batches for 3 minutes, then fold tortilla shells in half and flatten with a spatula.  Bake 5 minutes, turn and bake 5 more minutes or until cheese is melted and shells are golden brown and crispy.
  • Top with desired toppings and serve immediately.
  • Variations: *Add refried beans under the beef. *Use ground turkey instead of ground beef. *Swap corn tortillas for small flour tortillas. *Use hard shells instead of soft and place upright in a baking dish.  Fill with meat and toppings and bake 8-10 minutes.  No folding needed.
