Cinnamon Roll Apple Cobbler

This ooey gooey Cinnamon Roll Apple Cobbler is the perfect shortcut dessert. Made with fresh apples, spices, brown sugar and two cans of refrigerated cinnamon rolls.

Ingredients
  

  • 4 large apples, peeled and sliced thin
  • 1/3 cup brown sugar
  • 2 tbsp cornstarch
  • 1 tbsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp cloves
  • Pinch salt
  • 1 tbsp butter, rub
  • 2 cans Kroeger Ooey, Gooey Jumbo Cinnamon Rolls (can use Pillsbury Grands cinnamon rolls if you can't find Kroeger). Kroeger rolls contain an extra packet of cinnamon roll filling that is poured over the top before baking.  It makes them even more delicious. 

Instructions
 

  • Brush a 12" cast iron skillet generously with butter.  Preheat the oven to 375 degrees.
  • In a large bowl mix the brown sugar, cornstarch, cinnamon, nutmeg, cloves and salt.
  • Peel and core the apples, then slice them into thin slices (about 1/4").  Add apples to the apple spice mixture and toss to coat the apples.  Place the apple mixture into the buttered skillet and spread out evenly.
  • Place the cinnamon rolls evenly over the apples.  You should be able to use all 8 cinnamon rolls.  If you have a smaller pan the cinnamon rolls won't all fit in it.
  • Take the extra cinnamon roll filling (if you use Kroeger cinnamon rolls) and drizzle evenly over all the rolls.  If you don't have Kroeger rolls, skip this step.Bake at 375 degrees for 20-25 minutes or until the rolls are golden brown.  Remove from the oven and let cool for a minute or two.
  • Drizzle the rolls evenly with icing packet included in the roll can.  Serve warm.
  • NOTES: *If you can get Kroeger brand cinnamon rolls they make this cobbler extra ooey gooey.  If you can't get Kroeger, use Pillsbury Grande Cinnamon rolls and skip the step to add the cinnamon roll filling to top of the rolls. *You can make this recipe even easier by skipping the fresh apple filling recipe and adding two cans of apple pie filling.  I would recommend the fresh apple filling. *This cobbler would be great with some chopped pecans mixed into the apple filling. *Top with whipped cream or a scoop of vanilla ice cream. *Place any leftovers into a covered container.  They will keep for 2-3 days at room temperature. *Cinnamon rolls can be frozen for up to three months.  Place in a freezer safe container with parchment paper in between if you have more than one layer. *Reheat in the microwave for 10-20 seconds.
