French Toast Sausage Roll-ups

These French Toast Sausage Roll-ups are the best part of French toast wrapped around a savory sausage center.  It's the perfect bite of sweet and savory.

Equipment

  • 1 skillet
  • 1 Shallow dish
  • 1 whisk

Ingredients
  

  • 10 slices bread
  • 10 fully cooked frozen sausage links
  • 2 large eggs
  • 2 tbsp milk
  • 3 tbsp granulated sugar
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 1 tbsp butter

Instructions
 

  • Trim the crusts from the slices of bread.
  • Using a rolling pin or your hand flatten the slices of bread out.
  • Place one sausage at the top end of each of slice of bread and roll up tightly, pressing the edges of the bread to seal.
  • Add eggs, milk, sugar, cinnamon and vanilla to a shallow dish and whisk until smooth.
  • Preheat a skillet over medium heat and melt 1 tbsp butter.
  • Dip the roll-ups in the egg mixture to coat all of the sides.
  • Place the roll-ups in the skillet seam side down and cook until golden brown on all sides by turning the roll-ups.
  • Serve warm drizzled with syrup or dunk them in the syrup.
  • Notes: *Store in the refrigerator in a covered container for 3-4 days. *Reheat in the microwave for 30 seconds. *Roll-ups can be frozen in a freezer safe container for up to three months.
