Fresh peach syrup is so divine on pancakes, waffles, crepes, or ice cream. So easy to make and is a great way to use up those extra peaches!

- 3 cups peaches, peeled and coarsely chopped
- 1 cup water
- 1 tsp lemon juice
- 1/3 cup sugar
- 1 tbsp maple syrup
- 1/4 tsp cinnamon, optional
Prepare peaches by peeling and coarsely chopping them
Place peaches in a medium saucepan and add water.
Bring to a boil and reduce heat to medium. Cook until peaches are softened.
Blend the peach mixture with an immersion blender to desired consistency. May make it chunky or smooth.
Add lemon, sugar and maple syrup and stir. Cook on low heat for a couple of minutes, stirring occasionally until the sugar is dissolved.
Add cinnamon if desired and stir into mixture.
Pour peach syrup into desired container. Makes 1 pint. Refrigerate any leftovers for up to two weeks. If freezing, place in freezer containers and freeze for up to 3 months.
Note: Calories calculated for 4 tablespoons serving size. Approximately 8 servings in a pint.
