Pasta Chips

Pasta chips are a viral Tik Tok trend that are easy to make. Great dipped in my homemade marinara sauce or your favorite dipping sauce.

For pasta chips:
- 1 1 lb package of rigatoni pasta
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 tbsp grated parmesan cheese, plus extra to sprinkle over chips before cooking
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp garlic powder
- Salt and pepper to taste
- Dried parsley flakes to garnish, optional
For marina sauce if using:
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 medium onion, chopped
- 1 15 oz can crushed tomatoes
- 1 tbsp tomato paste
- 1 tbsp water
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- Salt and pepper to taste
- 3 tbsp grated parmesan cheese
For pasta chips:
Fill large saucepan with water which has been heavily salted, then add rigatoni. Bring to a boil and cook pasta to al dente according to package directions. Drain the pasta well and cool slightly.
In a large bowl, toss pasta with olive oil, parmesan cheese, oregano, basil, garlic powder and salt and pepper.
Place chips in air fryer, leaving a little space between chips and sprinkle with a little extra parmesan cheese. Air fry at 400 degrees for about 8-9 minutes until chips are crispy and golden brown. Toss the chips a couple of times while cooking if needed depending on your air fryer. Air fryer times may vary.
Sprinkle dried parsley flakes over the chips and marinara sauce to garnish, optional.
Serve warm with marinara sauce or other desired dipping sauce. Reheat the marinara sauce if needed.
Notes: *Pasta chips are best eaten warm or soon after you make them. They can be stored for up to five days in an airtight container at room temperature. *Calories are for one serving of pasta chips. Marinara sauce is an additional 19 calories per serving. *You could also use bottled marinara sauce or your favorite dipping sauce if desired.
For marinara sauce if using (make first):
Heat the olive oil in a medium saucepan over medium heat. Add diced onion and saute until transluscent, then add the garlic and saute one more minute.
Stir the tomato paste in with the onions and garlic and cook for about 1-2 minutes to slightly carmelize.
Pour in the can of crushed tomatoes with the water and stir together. Add dried oregano, basil, salt and pepper and stir..
Bring the sauce to a simmer and reduce to low heat. Simmer to meld the flavors for about 10-15 minutes, stirring occasionally, until thickened to desired consistency. Add water if a thinner consistency desired.
Taste the sauce and adjust seasonings if needed. Add parmesan cheese and stir into the sauce.
Set aside and make the pasta chips. Cover the sauce to keep warm until ready to serve
*Marinara sauce can be stored in a covered container in the refrigerator for up to 5 days or can be frozen in a freezer safe container for up to 30 months.
